And so super easy. I didn't even measure anything, but seriously, you can't mess this up. Here's the idea:
1 very large cucumber or 2 smaller ones, roughly chopped
2 mid-sized ripe tomatoes, roughly chopped
a tablespoon of very finely chopped red onion, if you want
about 2-3 oz. of good quality feta, chopped or crumbled
a handful of toasted hazelnuts, coarsely chopped
a handful of fresh mint leaves, chopped finely
a couple of sprigs of fresh oregano, stemmed and also chopped finely
a drizzle of good quality olive oil
a few glugs* of balsamic vinegar (maybe a tablespoon or two)
salt and pepper to taste
And you just toss it all together in a bowl and then serve it up. I mean, you could get really creative with this and replace the hazelnuts with garbanzo beans, or throw in some chicken and serve it over rice or quinoa. You could add chopped bell peppers, or... really, whatever you want. Avocado and chopped bacon? Who knows.
